With these healthy on-the-go breakfasts, no longer would we need to say, “I have no time for breakfast!” And we promise you, you will make time for all this yummy-ness!
#1 Quick Scrambled Eggs with Vegetables
Beat two eggs, put them inside a microwave safe container. Include a handful of vegetables (spinach, cherry tomatoes…the choices are endless) and a sprinkling of cheese. Microwave for 30 seconds, mix, and cook for 30 more seconds or until the eggs solidify. Cover it to eat later on or store the raw egg mixture in a refrigerator until it is ready to heat and then eat!
#2 Granola and Pumpkin Parfait
In a container with plain Greek yoghurt, place in a can of pumpkin puree and a handful of granola. Sprinkle with cinnamon. Done!
#3 Breakfast Burrito
Scrambles 2 egg whites, 2 tablespoons of salsa, 1/4 cup of black beans, and 2 tablespoons of shredded cheese. Wrap it in a small whole what tortilla. Create a couple more, wrap them in foil, and store them in the freezer and take them out when you’re about to go!
#4 Egg Muffins
Beat 10 eggs, 3 handfuls of spinach, 1 shredded zucchini, 1/4 cup of chopped onion, 4 slices of chopped cooked ham or bacon, and 1/2 chopped bell pepper. Sprinkle with salt and pepper. Portion the mixture evenly in a slightly greased muffin tin and bake at 350 F for 20 to 25 minutes. Microwave for a couple of seconds before you serve.
#5 Quinoa Bites
In a medium bowl, mix 2 cups of cooked quinoa, a cup of vegetables, 2 eggs, and a cup of shredded cheese. Sprinkle with salt and pepper. Divide them evenly in a slightly greased mini muffin tin. Bake it for 350 F for around 15 to 20 minutes.
#6 Fruit Soup
Chop a fruit of your choice (plums, peaches, berries, mangoes…) and mix with a cup of milk in a container. Chill in the fridge and eat when you want.
#7 Leftovers and Egg
If you want to make the most of your leftovers (as most cheapskates do—read more about tips from the extreme cheapskates), place a handful of leftover potatoes, vegetables, or meat in a container. Top it off with a cracked egg and heat in the microwave until the egg white is cooked. You can even sprinkle some Parmesan cheese on top!
#8 Frozen Nutty Banana
Cut a ripe and firm banana in half and un-peel. Arrange them on a freezer safe plate of small baking sheet. Spread each part with a tablespoon of almond butter evenly. Then stick whatever you like on the almond butter like chia seeds, granola, cinnamon, and the like. Insert a skewer or a popsicle stick for the end of each half and freeze for around 2 to 3 hours or until solid.
#9 Ricotta and Tomato Breakfast Sandwich
Spread a tablespoon of ricotta cheese on 2 slices of whole grain bread. Sprinkle them with salt and pepper. Add on 1 to 2 slices of fresh beefsteak tomato. Enjoy!
#10 Overnight Oats
The evening before, mix 1/3 cup rolled oats, 1/2 cup milk, 1/4 cup chopped nuts, 1/2 a mashed banana, and sprinkle of cinnamon. Seal inside a container. In the morning, you already have overnight oats. Heat in the microwave for 1 to 2 minutes if you want it warm.
#11 Egg Sandwich
Sautee a handful of kale. Fry 2 eggs and add salt and pepper. Place them on to of 2 whole wheat English muffin halves or toast along with a slice of cheddar cheese. Wrap them in foil so the cheese evenly melts.
#12 Savory Oatmeal with Egg
Prepare your oatmeal in your usual fashion with water or milk. Next, add a pinch of salt and pepper and top with a poached or over easy egg. Sprinkle with some cheese if you like!
#13 Apple Surprise
Cut an apple and half and remove the core. Drop in a tablespoon of nut butter in the two holes and sprinkle with a tablespoon of granola. If you want to save for later, wrap up the entire apple in foil or plastic wrap.
#14 Waffle PB&J Sandwich
Prepare a whole grain toaster waffle and cut in half. Spread 2 tablespoons of nut butter and layer with 2 to 3 slices of raspberries or strawberries instead of the usual jelly.
#15 Oats and Berries Microwave Muffin
Mix an egg, 1/4 cup of quick oats, and a handful of berries in a mug. Sprinkle brown sugar on top. Keep on mixing until combined evenly. Microwave on high for a minute. Take it out to check and keep cooking until the muffin is firm—around 30 seconds or so.
