#1 Quick Scrambled Eggs with Vegetables
Beat two eggs, put them inside a microwave safe container. Include a handful of vegetables (spinach, cherry tomatoes…the choices are endless) and a sprinkling of cheese. Microwave for 30 seconds, mix, and cook for 30 more seconds or until the eggs solidify. Cover it to eat later on or store the raw egg mixture in a refrigerator until it is ready to heat and then eat!
#2 Granola and Pumpkin Parfait
In a container with plain Greek yoghurt, place in a can of pumpkin puree and a handful of granola. Sprinkle with cinnamon. Done!
