#3 Breakfast Burrito

Scrambles 2 egg whites, 2 tablespoons of salsa, 1/4 cup of black beans, and 2 tablespoons of shredded cheese.  Wrap it in a small whole what tortilla.  Create a couple more, wrap them in foil, and store them in the freezer and take them out when you’re about to go!

#4 Egg Muffins

Beat 10 eggs, 3 handfuls of spinach, 1 shredded zucchini, 1/4 cup of chopped onion, 4 slices of chopped cooked ham or bacon, and 1/2 chopped bell pepper.  Sprinkle with salt and pepper.  Portion the mixture evenly in a slightly greased muffin tin and bake at 350 F for 20 to 25 minutes.  Microwave for a couple of seconds before you serve.
